The grocery market of Ukraine is conquering a new vegetable - broccoli
Top broccoli, bottom asparagus: the food market is gaining a new vegetable - broccoli. This is the result of crossing two cabbage. Everything is edible in broccoli: both the stem and leaves.

Agronomist Alexander Protsenko shows his experimental field on 8 acres. Seeds of broccoli are expensive, and the vegetable is still little known to Ukrainians, and therefore they are not grown much.
“The culture is quite unpretentious, like ordinary broccoli, cabbage. Need watering, fertilizer. We collect when the inflorescences are 15 cm. The leaves of the inflorescence go to food, and the leg, everything goes to food, ”Alexander explains.
They begin to collect broccoli on the fiftieth day of planting seedlings. The season lasts a month and a half, and new ones grow near the cut shoots.
For six hours in the field, one person can collect up to 12 kilograms of broccoli. Then the vegetable is sorted. Everything is manual, hence the price - an average of 400 hryvnias per kilogram.
Chef Yaroslav Artyukh is just looking at broccoli, there is no new vegetable in the menu of the restaurant where he works.
First, the chef washes broccoli and emphasizes: "You do not need to cut anything." Next, blanch for a minute and put it on ice to stop the cooking process.
For a few minutes, Yaroslav sends the broccoli to the hot oven and the dish is ready.
Now the chef is preparing a sauce of sour cream, kefir, garlic and herbs, and then tastes and shares his impressions of taste: “Broccoli is crispy enough, the taste, as farmers promised, asparagus with a touch of broccoli. Quite an interesting product and worth a try. ”
You can eat a new vegetable and raw, just adding lemon juice. Taste and vitamins are two components for which nutritionists love broccoli. In this cabbage - our mind and memory, say nutritionists. And there are practically no contraindications, if you do not go too far with cabbage.
